Bacon Wrapped Pork Tenderloin Recipe

Ingredients

  • 1lb Pork Tenderloin
  • 1 teaspoon steak seasoning
  • 3 bacon slices, cut in half crosswise

Preparation

1.    Preheat the oven to about 425°F. (220°C), then remove silver skin from pork tenderloin ensuring you are left with a thin layer of fat covering the pork.
2.    Sprinkle seasoning over pork. Wrap the pork with bacon slices. Secure them with wooden picks.
3.    Place pork on a lightly greased wire rack in an aluminium foil-lined roasting pan.
4.    Bake at 425°F. (220°C) for 25 minutes or until the meat thermometer which is inserted into thickest portion registers 155°F/ (68°C)
5.    Increase oven temperature to broil. Broil 5 inches from heat 3 to 5 minutes or until bacon is crisp.
6.    Remove from oven; cover pork with foil, and let stand 10 minutes or until thermometer registers 160°F. (71°C) –
7.    NB: We used McCormick Grill Mates Montreal Steak Seasoning but you can use any type of steak seasoning you like for the pork tenderloin.
8.    To serve, cut into thick slices.
